Chilli cheese toast is a quick and easy snack made with bread, cheese, chillies and seasonings, toasted or baked until crisp and cheesy. Popular Indian versions use green chillies and ginger, while cafe-style variations may include jalapeños, olives and herbs.
About Chilli Cheese Toast
Chilli cheese toast is one of the easiest and quickest snacks you can make with bread and cheese. Crispy toasted bread topped with a spicy cheese mixture makes for a satisfying breakfast, tea-time snack or light meal.
In this post, I am sharing two variations of chilli cheese toast.

The first version is a classic Indian-style chilli cheese toast made with green chillies, ginger and black pepper. This is the version I have been making for the family for years. The addition of ginger gives a subtle warmth and aroma that pairs really well with melted cheese.
This recipe was also inspired by our neighbor-auntie who used to make hot cheese chilli toast sandwiches and share them with us when I was young. She would add plenty of ginger to the cheese mixture. I usually add less, but you can easily adjust it to your taste.
The second version is a cafe-style cheese toast made with jalapeños, olives, mixed herbs and cheese. It has a slightly tangy and herby flavor, similar to the cheese toasts served in many cafes.
Both versions are made with simple pantry ingredients and need very little prep. You can bake, grill or even make them on a tawa or skillet depending on what works best for you.
Serve these cheesy toasts for breakfast, evening snacks or as a quick meal with soup or salad.


Ingredients & Substitutions
- Bread: You can use White Bread, brown bread, whole wheat bread, multigrain bread or sourdough bread. I usually use homemade Whole Wheat Bread.
- Cheese: Any good melting cheese works well here like mozzarella, cheddar or processed cheese. I often use a mix of cheddar and mozzarella as mozzarella gives a nice stretchy texture while cheddar adds more taste. You can also use either one depending on what you have.
- Green Chillies: Used in the Indian-style version for heat and flavor. Adjust the quantity depending on your spice preference.
- Jalapeños & Olives: These are used in the cafe-style variation. Jalapeños add mild heat while olives give a tangy salty taste.
- Ginger: Ginger gives a lovely warmth and aroma to the Indian-style version. You can skip it or replace it with garlic if you prefer.
- Mixed Herbs: Added in the cafe-style variation for extra flavor.
- Salt & Black Pepper: Add as needed for seasoning.
- Butter: Butter helps make the bread crisp and flavorful. You can also use olive oil or plant-based butter.

How to make Chilli Cheese Toast (Stepwise)
Indian-Style Chilli Cheese Toast
1. Before assembling the toasts, preheat the oven for 15 minutes at 230 degrees C (445 degrees F).
For the step-by-step photos, I divided the bread and cheese into two portions to show two variations.
In a bowl, take ¼ cup grated cheddar cheese and ¼ cup grated mozzarella cheese.
Add 1 chopped green chilli (about ½ to 1 teaspoon finely chopped green chillies), 1 teaspoon grated or minced ginger, 2 to 3 pinches black pepper and 2 to 3 pinches salt or add as required.


2. Mix well.


3. Slice 5 to 6 bread slices into triangles or rectangles. You can remove the edges if you prefer.
Since I used moist homemade whole wheat bread, I kept the edges intact.
Spread butter (softened or melted) or olive oil evenly on the bread slices.


4. Next top 1½ tablespoons of the ginger-chilli cheese mixture evenly on the 6 halved bread slices. Set aside.


Jalapeño Olive Cheese Toast
5. For the cafe-style variation, mix together ¼ cup cheddar cheese and ¼ cup mozzarella cheese in a bowl.
Top the remaining 4 or 6 halved buttered bread slices evenly with about 1½ tablespoons of the cheddar and mozzarella cheese mixture.


6. Arrange sliced olives and chopped jalapeños on top. Sprinkle mixed herbs and a few pinches of black pepper and salt.


7. Place all the prepared bread slices on a baking tray.


8. Bake or grill in the preheated oven at 230 degrees C (445 degrees F) for 5 to 7 minutes or until the cheese melts and the bread turns crisp and lightly golden.
You can place the tray on the center rack or lower rack. Keeping the tray on the lower rack helps the bread toast and brown better.
Use both the top heating elements of the oven while baking or grilling.


9. Bake just until the cheese melts well and the bread becomes crisp and toasted. Avoid over-baking, as the cheese can turn chewy.


10. Serve the chilli cheese toast and jalapeño olive cheese toast hot with tomato ketchup or your favorite dipping sauce. Sprinkle red chili flakes if you like.


Helpful Tips
- Use medium-thick bread slices. Very thin slices can become too crisp before the cheese melts properly.
- Do not overload the bread with too much topping. A balanced layer helps the cheese melt evenly and toast properly.
- Freshly grated cheese melts much better than packaged pre-grated cheese. Pre-grated cheese is usually coated with anti-caking starch which can affect the texture and melting.
- You can add finely chopped coriander leaves or spring onion greens for extra flavor.
- If you do not have an oven, make the toasts on a tawa, flat skillet or frying pan. The cheese will melt well, though the top may not become as golden as oven-baked toast. I have also shown the tawa method in the video.
- For a sandwich version, place another bread slice on top and grill in a sandwich toaster.
For Chilli Cheese Toppings
Preparation

Preheat the oven at 230 degrees C (440 degrees F) for 15 minutes.

In a bowl, mix together cheddar cheese, mozzarella cheese, green chillies, ginger, black pepper and salt. Mix well.

Slice the bread into triangles or rectangles. You can keep or remove the edges as you prefer.

Spread butter or olive oil evenly on the bread slices.

Spread the ginger-chilli cheese mixture evenly on some of the bread slices and set aside.
Making Chilli Cheese Toast

Place all the prepared bread slices on a baking tray.

Cafe Style Variation

For a cafe-style version, top 3 buttered bread slices with a mixture of ¼ cup cheddar and ¼ cup mozzarella cheese.

Add sliced olives, chopped jalapeños, mixed herbs, black pepper and bake until the cheese melts and the bread turns crisp.
- Use medium-thick bread slices. Very thin slices can become too crisp before the cheese melts properly.

- You can use cheddar, mozzarella or processed cheese. I often use a mix of cheddar and mozzarella, but any good melting cheese works well.

- Add salt carefully as butter and cheese already have salt. You can also skip the salt if needed.
- If making for kids, skip the green chilies or reduce the quantity. Instead of green chilies, you can use red chili flakes.
- Feel free to add your choice of seasonings and spice mixes. Dried herbs, Cajun seasoning and pizza seasoning also work well.
- Garlic can be added instead of ginger. You can add finely chopped coriander leaves or spring onion greens for extra flavor.
- To make chilli cheese toast on a tawa, skillet or frying pan, spread butter on one side of the bread and place the buttered side on the pan. Lightly toast the bread. Meanwhile, spread some butter on the top side. When the bread is lightly toasted, turn it over. Spread the cheese-chilli-ginger mixture on top, cover the pan with a lid and cook until the cheese melts.
- To make chilli cheese toast sandwich in a sandwich maker or panini press, spread butter on both bread slices. Add the cheese-chilli-ginger filling on one slice, cover with the second buttered slice and toast until crisp and golden.
- Approximate nutrition information is for one serving of the classic chilli cheese toast and does not include the olive and jalapeño variation.
